Archive mail server files

Does anyone have a method for archiving old mail files from the mail server on 10.2? I'm particularly interested in storing users' mail boxes.

We are running our own mail server and want to use IMAP for user access. However, periodically we want to archive old e-mails and delete them from the server. Has anyone tried this?

We're using the standard mail server that came with OS X 10.2
