Greek & OSX

Does anyone know how to create keyboard mappings for use in carbon and cocoa apps? I desperately need to read (web pages/documents), write and print Greek content. I know that the Greek characters do exist but I do not know how to bring them to life.

There's an alpha release of a patch for Modern Greek, with the monotonic (single accent) system. (Greek Patch)If you need polytonic Greek (Ancient Greek, etc) I'm not sure what is available. As for full Greek systems, Rainbow Computers seems to refuse or be unable to sell Greek localized systems to anyone outside of Greece.
