Probably one of the nicest aspects of installing X Windows is running something which requires a GUI -- like The GIMP for image manipulation. Yes, not a perfect example for you, as you have the graphics programs you need. But it's nice to know that you could run it if you wished to.

A more real-world example might be xchat, an IRC client that has a ton of features. It won't run from the command line, but with fink and X Windows, it's some typing (sudo agp-get xchat) and a couple mouse clicks away from installed and functional.

Plus, it's cool being able to say "Yea, I'm running xhcat through X Windows running rootless on Aqua in OS X." ;-)
