We're not talking shareware or trial downloads just the free stuff (Freeware & Open Source)

OpenOfficeAqua (eqv of MS Office)
eDrawings (for viewing cad drawings)
McDwiff (for viewing cad drawings)
Perian (plugin for viewing more video in Quicktime)
Skype (video chat)

TextWrangler - powerful and very useful Text editor
OpenOffice - for when I have Office docs
CocoaBooklet - takes a PDF file of pages and creates a new PDF as 'printer pairs', imposed to print as a folded booklet
CyberDuck - Superb FTP, WebDAV client - and more!
Oolite - 3D space trading and combat game, based on Elite

EasyFind--when Spotlight isn't enough
HexEdit--when you need to explore and edit what's inside a file
XMenu--dropdown menulet for quick access to apps
MenuClockCalendar--all in one convenient and configurable menulet app
TextWrangler (ditto with benwiggy)

Although some have been replaced by newer apps, I've been using these so long that they're simply part of what I expect of my workspace.

TextWrangler - It's like BBEdit without the HTML
MacPorts - It's not really an application on it's own, but I could not function without the software it provides.
Gimp - It's the Photoshop stuff I use, without the price.
Audacity - An amazing audio editor.
AlephOne - I almost forgot this, but ... you know: Marathon rules.

Adium used to make this list. It would probably replace Audacity if I still IMed much.

Play Sound is a simple, no-fuss sound player for Mac OS X. I use it in my Entourage rules to get custom sound notifications for special mail.

A few useful freebies that haven't been mentioned, I think, and that see a lot of use in our household:

Linotype FontExplorer X (manage your fonts)
MkConsole (display logs, etc., on desktop)
OnMyCommand (add commands to contextual menu)
X Lossless Decoder (convert audio formats)
OpenArena (Quake 3 derivative fragfest)

I'm amazed that I see Skim only mentioned once: it's a truly excellent app if you read PDFs at your computer for prolonged periods.

Handbrake is definitely one of mine. Everybody should have Handbrake. I have to say though - The Windows version sucks.... just like Windows itself...:p
