I would like to have a rule in Entourage that places sent files in a folder based on the addresses used; e.g. if sent to fred@fred.com, that email would be placed in the Fred folder.

However, if I get an email from fred@fred.com it should just come into the inbox with the rest of my email.

What's the best way to do this?

Select Rules from the Tools menu.
Click on the Outgoing tab
Click New
Select the criterion to "Any To recipient" "is" fred....
Select the Action "Move Message"
Select the Fred folder.

You will need to create a folder for each address.

If you're looking for an automated way to setup lots of folders for different email addresses, I'm not sure this is possible in Entourage. But someone else here may know better.
