Assuming your using 10.4 ("Tiger"):

1) Go to /Applications/Utilities/Java/J2SE 5.0 and double-click on "Java Preferences". In there, you can move J2SE5.0 to the top of the default application and for use for Applets.

2) If you want to use commands from the Terminal (command line), I set the following environment variables in ~/.bash_profile

export JAVA_HOME=System/Library/Frameworks/JavaVM.framework/Versions/1.5/Home

export PATH=$JAVA_HOME/bin:$PATH

Then reload your profile with source ~/.bash_profile

3) Then, from a terminal execute java -version and you should see the following:

java version "1.5.0_02"
Java(TM) 2 Runtime Environment, Standard Edition (build 1.5.0_02-56)
Java HotSpot(TM) Client VM (build 1.5.0_02-36, mixed mode, sharing)
