If your computer will boot MacOS 9, it should boot it w/o problems from an iPod; if your computer will boot MacOS 8, same story.
Isn't MacOS 8 awfully long in the tooth for a Mac as new as a G4 iMac?

Looks like the last iMacs to boot MacOS 8.6 came in Blueberry, Grape, Strawberry, Tangerine, Lime, and Graphite.
The G4 1GHz model appears to be OS X only. I'm not entirely sure you'd be able to boot 10.1, it might only run 10.2 and later, but I won't state that with any confident. I'm more confident of the spectacular unlikelihood of this machine to boot MacOS 9 or 8.
Probably won't boot System 6 either, even if you put it on a USB floppy :p
You can run 8.6 or 9 in a window if you want, though, using SheepShaver. You just can't boot from it, and from within SheepShaver you won't be able to network or print or drive peripheral devices like scanners.
