Well, I use Quadra's (running 8.1) as mail servers (EIMS) and DNS (MacDNS) servers all the time; the other possibilities are to look into NetBSD (http://www.netbsd.org/) or shop around for an old copy of A/UX.

I started to get into running a webserver when i was in college and i started by using a IIci and it was not terribly fast, but it worked great. a quadra is a step up from that and if it is not heavily used it would be great for a webserver. the only thing you might want to do is drop a larger drive in it for more space. I have stepped up several times to where i am running an imac 333 as my webserver now, but i still use a 7100 as an email and DNS server and it is more that fine for the limited amount that me, my brother and father and occasionally mother hit it for our own use. the nice thing about having it as an email server is that you can set it for not having a limit on size of an email. the only limitation would be the harddrive.
